The Armed Forces Recipe Service is a large collection of high-volume, standardized food service recipes developed by the United States Department of Defense and used by military chefs, institutional and catering operations. All of the recipes have been developed, tested and standardized for product quality, consistency and yield. The U.S. Dietary Guidelines were among the many considerations in both the selection and development of the recipes. Many of the recipes have been modified to reduce fat, salt and calories. For new and experienced cooks, consistent use of standardized recipes is essential for quality and economy.
Broken into two volumes due to its size, the Armed Forces Recipe Service contains over 1,600 tested recipes calibrated to feed 100 people and easily adjusted up or down to adjust portion size depending on the number of people being fed. The recipes contain a basic nutritional analysis as well, detailing calories, carbohydrates, protein, fat, cholesterol, sodium and calcium.
Both volumes of The Armed Forces Recipe Service must be purchased to have the manual in its entirety. This volume, Volume I of II, holds the following sections General Information, Appetizers, Beverages, Breads and Sweet Doughs, Cereals and Pasta Products, Cheese and Eggs, Cakes and Frostings, Cookies, Pastries and Pies, Puddings and Other Desserts, and Desserts (Sauces and Toppings).

I moved into a senior citizen mobile home park last year. It's much nicer than you would think, Everyone takes care of their home and the entire place shows pride of ownership, but I digress. Every Friday night at our recreation center, we have rotating teams of volunteers that cook dinner for roughly 75 people. Since I used to cook in the Army and made my living for years cooking for 2000 or more per meal, I soon found myself not only on a team, but leading it. I was able to draw from my years of experience as far as techniques and methods, but found myself lacking with recipes. These 2 books were just the thing I needed. Yes, military cooking has a bad reputation, but I assure you, it's not because of the recipes. It was the cook that didn't care about his finished product that has given Army food a bad rap. Yeah, as with any cookbook, there are a few recipes that are just not all that good, but for the most part, these recipes will produce very tasty results.Product details

It is not what I expected. Many of the recipes started with store bought products like cake mixes etc. I was a bit disappointed but still can find some uses for some of the recipes
My church offers a monthly community lunch, feeding 100-120 people each month. As the meal planner and head cook, I use this book, and volume 2, as a reference on quantities and for recipes. It isn't easy to find recipes for this large a group. Most cookbooks consider a crowd to be 25-30 people - to me, that's just family!
I give this book a 5 Star rating because all of the recipes are authentic. AS a retired NAVY Chef, I am very familiar with most of the recipes, having used or experienced them. All of the recipes are delicious and nutritious, and although the portions are for 100 servings, the recipes can be easily converted for any amount. I am thrilled with this purchase and I bought both volumes, so that I will never have to purchase any other recipe books.
I gave this rating a 5 star . I am and have been in the military on the ARMY side for 33 yrs. 27 yrs in Food service. These books are amazing and have a lot of the recipes I like. I am old school so I would rather read from a book rather than on computer. I have both volumes and love them . Easy to follow ,easy to convert to different amounts, I have other volume cooking cook books and they don't come close to these cook books. The others are good but, not like these.
Great cookbook, lots of information needed for a large group. Has all the facts needed at your finger tips. I am very glad I purchased it. It it much better than the book for dummies. I know so since I purchased both books at the same time. Also fast delivery
